One of Hove's finest restaurants, Graze is set to close its doors to customers on July 25 for a remodeling that is to last for the next five weeks.
The fine dining resturant will be going through a reconstruction in its physical structure, its dining style and will be taking on a new name, "MARKET".
Kate Alleston, who co-owns the restaurant with chef, Neil Mannifield says: 'The fresh new look of the building has been designed to give the feel of a traditional market with a swathe of Victorian Green metro tiling, a lawn wall and a bright, clean, utilitarian approach to the furniture, lighting and wall usage.'
Graze, which is originally known for its award-winning complex, upper-class dining services will be opting for a less formal style by working with local suppliers in Sussex.
Ms Alleston says: 'Eating has changed a lot over the past few years and it's all about quality casual dining now. See restaurants like Barrafina, Palomar and Pulpo.'
She expressed confidence that a majority of Graze customers are going to love and frequent MARKET while they will be gaining new ones.
MARKET is posed to be the first restaurant in Brighton where bar stool dining and cooking is the main activity.
The new 50-cover restaurant which will also allow diners to watch chefs while they prepare their meals will open at the beginning of September.
